Vinification
Soft pressing is a delicate technique that utilises a rolling press equipped with an inflatable membrane. This membrane gently applies pressure to the grapes against the inner surface of the press, ensuring a tender and precise extraction process. The result is the production of high-quality must (grape juice), which forms the foundation for exceptional wine.
Maintaining the integrity of the wine during bottling is crucial. Regulating the input of CO2 gas into bottles effectively prevents oxidation, ensuring that the wine retains its vibrant flavour and aroma profiles. This meticulous control of gas flow is a critical step in preserving the wine’s quality from the press to the glass.
